Sailmaking - Using a Sail Block

I have a couple questions regarding using a sail block.

Where do you align the specified draft point of the panels on the block? Do you try to keep this point consistent or would you possibly vary the alignment on the block as you work the different seam lengths?

The block I am using has a constant fixed bevel; however typical of all sail blocks I have seen the shape of the top of the block is an airfoil.

Also along the thought of varying the draft % from head to foot, what is the prevailing wisdom of the best configuration? Lets say the main sail has four panels and is for a 1-meter boat. Does anyone have any thoughts on what the variance should be at the seam lines and why?
Would the configuration of the jib match?
