I would suggest keeping it on the thin side and not much thicker than 1/4" at most.
The multihulls sail much faster than a monhull and thus easily and quickly build up lift as the keel moves through the water. Most full size beach catamarans in the 18-20 foot length have boards around 3/4 to 7/8 inches thick. A nice rounded leading edge and sharp trailing edge. There really isn’t a lot of “foil” shape to them. Once it starts moving through the water, boat speed will provide the high and low pressure sides to the board for adequate lift.
The board on my 1 Meter was built to a thickness of about 4 mm and in light wind it is fine, but I often think in heavier wind I should go to maybe a 1/8 and add some carbon to stiffen. Just to lazy to do it - but the 1 Meter is seldom raced - no one close by. Just make your board easy to remove and you can change both thickness, angle of rake and depth as you get some time in on the sticks.
ok thanks 1/4" it’s about 0.6mm (i am french!) and my plywood is 4mm so I put 2 plywood and fiber and if it is too thicker I will change in the future.
My mini40 is not for competiton just for pleasure.

For the fins and rudders on my 2metre cat I’m using foam cores laminated with CF - they’re very light about 25-30grammes for a bare rudder (without the winglets yet) and very stiff. I get the foam cores hot-wire cut by a guy who specialises in model plane wing cores.
For the rudder stock and the mounting of the fins (they’re detatachable) I cut slots in the foam core and epoxy in CF tubes, which I fair in before laminating.
For the Cat I need two of each of course so to make them as similar as possible I build them as a joined pair and then seperate them when the lamination is completed, I then epoxy additional CF tubes into those I embedded in the cores.
I don’t know how to post pictures here yet but when I learn I’ll post some photo’'s.
