Easy III Rig Wind Speed Recommendations?

I’d appreciate some help from competitors using Easy III rigs. I’m building some for my new Footy, and I’d appreciate it if someone could give me wind speed recommendations for the different sizes on a boat that weighs about 500g.

I built 3 rigs. An 8.1, a 13.1, and a 19.1. I’m hoping that I have OK coverage from 0 to 15 knots, because I’m out of materials and only a week from the Quahog!
